COVAP Opens a Gastrobar – D’Tapas

Have you heard the news? We opened a restaurant! Not just any restaurant of course, but a gorgeous gastrobar called D’Tapas in the heart of Córdoba, our hometown. The whole place was constructed with the planet in mind, with sustainable and environmentally-friendly materials, and is a fresh and comfortable place to dine for all. At COVAP, a restaurant of our own was a natural next step—here, we can share even more Spanish products with the world and prepare them in a way that really highlights their natural qualities; we’re bringing out the best of the Los Pedroches Valley. 

Open for breakfast, lunch and dinner, the restaurant is focused on showcasing our cured meats, fresh Iberian pork, aged beef, and dairy products from our cooperative farms. You may just know COVAP by our jamón and charcuterie, but in Spain we have even more to offer. And of course, all of our ingredients are of the highest quality. 

The menu was designed with the help of the folks from the Basque Culinary Center, a highly prestigious gastronomic institution known all over the world. You’ll start off with big plates of jamón or paleta, or even our aged cheeses and bite-sized sandwiches featuring every cured 100% Ibérico product you can imagine. Some of the more creative ways to start off your meal are with lamb bao buns and a presa (a fresh pork cut popular in Spain) carpaccio. 

The main courses highlight our prized beef and pork in some of the most coveted cuts. If you haven’t tried fresh Iberian pork cooked over a charcoal grill, now is your time. We are also serving a hyper-gourmet burger made from aged ground beef and topped with cream cheese, as well as gorgeous cuts of lamb served with baba ganoush. We offer a slew of vegetable dishes to accompany them. Think two varieties of salmorejo, sauteed mushrooms with a poached egg, and homemade gourmet french fries that are nothing short of life-changing.
