This piece has been subjected to a long and traditional aging process in our own natural drying houses for a minimum of 18 months. It is a valued piece for having a very juicy meat that comes from the front legs of the 100% Ibérico pig. Its succulent meat, thanks to the infiltration of fat, is combined with its soft texture and characteristic marbling.
